In 1974 Ken and Linda Wilke opened Quadra K Meats, providing custom processing for small livestock producers. Our son Jeff is now operating the business.
We have a mobile slaughter unit which goes to your farm, where we butcher your animal on site and then take it back to our plant for custom cutting. You do not have to transport a live animal to us. After 9-12 days of aging, the meat is cut and packaged according to your specifications.
We do all of our own curing and smoking of hams and bacons, using hickory wood chips. We also make whole muscle jerky, salami, Summer and German sausage.
All carcasses are tagged on site and each order is processed separately so you are guaranteed to get your own meat. We strive to minimize waste with careful skinning, trimming and deboning so that you get a higher in-package yield.
In addition to custom processing, we also sell halves and quarters of beef and whole or half hogs which we get from Sandpoint ID also a local family business. We then cut and package them according to your specifications. Their meat is locally produced without antibiotics and hormones.
